This Salmon Avocado and Quinoa Bowl is so delicious! You can make this salmon quinoa bowl for lunch, dinner, or even your next family get together!
Serves: 3 – 4
Total time: 20-30 minutes
Ingredients:
1 cup quinoa
3 salmon fillets
1 pint grape or cherry tomatoes
¼ cup cilantro
½ bunch green onions
½ red onion
2 limes
1 tablespoon apple cider vinegar
1 avocado
2 tablespoons olive oil
2 cups water
sea salt
black pepper
Directions:
1. Add quinoa and water to pot and bring water to a boil. Then turn heat down to low setting. Cover pot.
2. Slice tomatoes in half, chop red onions, chop green onions, slice limes in half, cut avocado.
3. Rinse salmon and pat dry with a paper towel. Sprinkle salt and pepper on both sides of the salmon fillets.
4. Use a good frying pan, ideally non-stick, and add butter or olive oil. Heat butter or olive oil over medium high heat and cook for 4-5 minutes.
5. Mix all ingredients in a large bowl. Add lime juice, 1 tablespoon olive oil, and 1 tablespoon apple cider vinegar. Toss to combine. Taste and add salt and pepper as needed.
6. Top with avocado and serve warm.
